I've having dinner with friends tomorrow night, and volunteered to bring dessert. I decided to make these yummy strawberry-shortcake-on-a-stick treats, that I had at another dinner a couple of weeks ago.The recipe calls for a loaf of pound cake, which I knew I could get at the grocery store.
The grocery store in my neighborhood had the pound cake alright, but it was more than $4 for a wimpy 10oz loaf! I couldn't bring myself to pay that much money for something I was pretty sure I could make with the ingredients in my pantry.
So I did a search for a pound cake recipe, and found this one. This recipe was also educational, as I learned that pound cake got its name because the original recipes were a pound of butter, a pound of flour, a pound of sugar, and a pound of eggs. Who knew? I also knew this recipe was a winner when one of the reviewers stated "I reject any recipe that does not have a pound of butter in it." Ha!
I did have to halve the recipe, because a pound of all those ingredients makes a truckload of cake. And because I didn't have the 6 eggs the full recipe it required. But now I know how many eggs are in a pound.
The cakes are in the oven now, but if the batter is any indication, they are going to be super yummy!
