Too Much Potato Salad

Tonight we had a Women's Ministries event at church, and everyone was asked to bring a dish to pass. Because I haven't been grocery shopping in about two weeks (my larder is nearly bare), I knew I'd have to just pick something up on my way. I debated with whether or not I actually needed to bring anything, knowing there would be PLENTY of food. I wanted to do my part, though, so I picked up some potato salad at the store. The good kind of potato salad - the mustard kind, not the gross kind with hard-boiled eggs in it. (Seriously, who does that?? You can't tell the eggs apart from the potatoes...gross). Anyway...of course I bought way more than I needed too, and of course there was so much other food there that hardly any of my potato salad was eaten. So now I have a whole 'lot o' potato salad in my fridge and little else.

At least I have lunch for tomorrow.

The great thing about potato salad is that it is good left-over.
